Annie's own recipe and her solution to the continuing demands for Pud right after everyone has consumed a gargantuan festive meal.


It's the tradition as much as the taste that people yearn for and this lighter version ticks both those boxes, stuffed as it is with dried fruit and macadamia nut, spices and good brandy but without the suet, butter and breadcrumbs of Northern hemisphere puddings.


AND it's so simple to reheat it makes life much easier for the Cook, especially if you've had a glass or two of bubbly by then!
